Breakfast is the most important meal of the day and these super easy to make bars, packed full of nuts and seeds, will keep you going until lunch.
Prep time 10 minutes| Bake time 20 minutes| Makes 12 bars
Ingredients
100g butter
100g runny honey
2 tablespoons crunchy peanut butter
2 bananas, sliced
100g walnut halves
2 teaspoons ground cinnamon
175g rolled oats
25g dried cranberries, plus a few more to decorate
25g pecans, plus a few more to decorate
15g sunflower seeds, plus a few more to decorate
Method
- Pre-heat the oven to 180 degrees˚C (160 fan)
- Line a small rectangle baking tray (around 15 x20 cm) with some baking paper
- Heat the butter, honey and peanut butter in a large pan until the butter has melted
- Take the pan off the heat and stir in the oats, walnuts, cinnamon, seeds, pecans, dried cranberries, and banana slices
- Tip the mixture into the prepared tin, pressing down as you go so that it is evenly distributed
- Sprinkle over the remaining pecans, cranberries, and sunflower seeds
- Bake the breakfast bars for around 20 minutes, or until the edges have started to firm up
- Leave the mixture to cool in the tin before slicing
- These bars will keep for up to a week, stored in an airtight container
