Besan ki Barfi are soft, fudgy, hand made cookies. Often enjoyed during the Winter months, these sweet treats have a warming effect on the body (that’s thanks to the gram flour as it produces heat!) Easy to make and ever so more-ish. They’re perfect for any occasion, or no occasion at all, plus this recipe is completely gluten-free!

Ingredients

250g gram flour
230g granulated sugar
175g ghee
2 tbsp mixed nuts (e.g. almonds, pistachios)
1 tbsp flaked almonds
4 cardamom pods, crushed (or 1 tsp cardamom powder)

Method

  • Grease an 8 inch brownie pan with ghee and set aside
  • On a medium heat, roast the flaked almonds on a saucepan, until lightly toasted
  • In the same pan, dry roast the gram flour until you can smell the aroma and there’s slight colour. Remove from heat and set aside
  • Put a clean saucepan on high heat and pour in the ghee, mixed nuts, and cardamom and brown in the ghee
  • Add the roasted gram flour and create a paste with a metal spatula. Let the mixture come to a rolling simmer
  • Add the sugar in 3 batches and mix until completely dissolved. As the mixture thickens, it will form a dough that pulls away from the sauce pan. The mixture is ready when you run the spatula through the middle and it stays separate
  • Add the mixture to the prepared tin and decorate with flaked almonds
  • Allow to cool then refrigerate until firm
  • Cut into serving sizes and serve
