Butternut Squash tray Bake
Part of our ‘Feed the Family for under a tenner’ range. This delicious butternut squash – vegan friendly – tray bake costs less than a tenner and serves 4 portions. This meal takes less than 10 minutes to prep so you can put your feet up whilst it cooks!

Ingredients
- Kohinoor Adraki Bhuna sauce – 1 Packet
- Kohinoor Basmati rice – 300 grams
- Diced butternut squash
- Large diced red onion
- Chickpeas – 1 tin
- Baby spinach leaves – 50 grams
- Chopped Coriander – handful
- Salt – to taste
- Butter (optional) – 50 grams
method
Wash and soak the basmati rice in lukewarm water and keep for ½ hour.
Drain the rice and put into a baking tray top with diced red onions, diced butternut squash, baby spinach, drained chic peas, salt, content of the Kohinoor Adraki Bhuna sauce and chopped coriander leaves. Lightly mix and pour the boiling water, shake the tray to level the contents.
Cover with aluminium foil, preheat oven to 180 degrees centigrade and bake for 55-60minute, remove foil and cook for another 7-10 minutes.
Garnish butternut squash tray bake with coriander and serve hot.
