Ingredients

400g diced chicken
1 packet Kohinoor Adraki Bhuna Sauce
2 tsp oil
40g fried onion
20g chopped coriander
20g chopped mint
200g Kohinoor Extra Flavour Basmati rice
¼ g saffron
1 tsp oil
20g butter
5g salt
400 ml water
4 boiled eggs

Method

  • In a large pan, heat the oil and sautee the chicken until it’s browned
  • Add the Kohinoor Adraki Bhuna Sauce and simmer until the chicken is cooked through
  • Wash and soak the Kohinoor basmati rice in lukewarm water for 30 minutes
  • Soak the saffron in 5 tablespoons of hot water
  • Heat the oil and butter in a thick bottomed pan
  • Drain the rice and add to the pan with the salt, boiling water, and saffron water
  • Cook on medium heat until the water is absorbed and holes form on the surface of the rice
  • Cover with a kitchen towel and place a lid on the pan. Allow the rice to steam for 6 minutes. When ready, use a fork to separate the rice and make it fluffy
  • Layer the chicken bhuna and rice in alternate layers and serve with fried onions, chopped coriander, mint, and a boiled egg.
