Prep time 20 mins, plus rising | Bake time 15 mins| Makes 10 rolls
Ingredients
200g strong white flour, plus extra to dust
7g dried fast action yeast
1 tsp salt
Zest ½ lime
1 tsp dried chilli flakes
1 tbsp olive oil
150ml water
For the glaze:
2tbsp runny honey
1tsp dried chilli flakes
Zest ½ lime
Method
- Mix together the flour, yeast, salt, lime zest, chilli flakes, oil and water to form a dough. Tip onto a lightly floured surface and knead for 5min, or until smooth. Return to the bowl, cover, and leave to rise for an hour, or until doubled in size.
- When the dough has risen, shape into 10 equal balls and place onto a lined baking tray. Cover and leave to rise again for 30min, or until puffed up. Pre-heat the oven to 200°C.
- When the rolls have risen bake for 15min, or until a light golden colour. Mix all the glaze ingredients together in a pan on a medium heat, bubble for 5 min. Brush over the rolls whilst still warm.
