Indian spiced spinach omelette recipe

If you’re bored of your usual omelette recipes, but want a quick and easy lunch this is the recipe for you! Watch Chef Navin make his delicious Indian spiced spinach omelette.

6 eggs
4 tsp oil
250g baby spinach
3 spring onions (chopped)
Handful of fresh coriander (chopped)
1 packet Kohinoor Egg Curry Cooking Sauce
1 tbsp chopped giners


  • Pre-heat the oven to 200˚C
  • Heat a large pan with the 2 tsp oil
  • Add the baby spinach and gently sautee
  • Crack all the eggs in a bowl
  • Add the Kohinoor Egg Curry Sauce, spring onions, chopped coriander, and ginger
  • When the spinach is wilted, drain and add to the egg mixture
  • Whisk together the egg mixture
  • Add the rest of the oil back to the pan
  • Add the egg mixture back to the pan and cook for 5 minutes on the hob
  • Transfer the pan to the oven and cook for 8-10 minutes
  • Cut into slice, garnish with more coriander and red chilli, then serve
