Ingredients
6 eggs
4 tsp oil
250g baby spinach
3 spring onions (chopped)
Handful of fresh coriander (chopped)
1 packet Kohinoor Egg Curry Cooking Sauce
1 tbsp chopped giners
Method
- Pre-heat the oven to 200˚C
- Heat a large pan with the 2 tsp oil
- Add the baby spinach and gently sautee
- Crack all the eggs in a bowl
- Add the Kohinoor Egg Curry Sauce, spring onions, chopped coriander, and ginger
- When the spinach is wilted, drain and add to the egg mixture
- Whisk together the egg mixture
- Add the rest of the oil back to the pan
- Add the egg mixture back to the pan and cook for 5 minutes on the hob
- Transfer the pan to the oven and cook for 8-10 minutes
- Cut into slice, garnish with more coriander and red chilli, then serve
