Kiribath is a Sri Lankan celebration milk rice that is traditionally enjoyed in the new year for good prosperity. Its a rice dish that can be enjoyed with savoury dishes such as chutneys and curries, or even a simple sprinkling of sugar!
Ingredients
1 cup pudding rice
1 cup water
1/2 cup coconut milk
Method
- In a saucepan, put in the rice and the water. The water should be a height of 1 digit on your finger from the rice
- Boil for 10 minutes until large bubbles appear
- If the water has been absorbed but the rice isn’t fully cooked, carefully add more water until the rice is cooked through
- When the rice is cooked, take it off the heat
- Add the coconut milk to make it creamy and season with salt
- Form an oval of the kiribath on a plate and chill for 20 minutes
- Cut into slices and serve
