Mango chutney is a delicious condiment to pair with lots of food – not just curry! Making your own mango chutney is simple and the flavour is incredible.
Ingredients
4 large mangoes, peeled and cubed
2 bramley apples, peeled, cored, and chopped
4 cloves garlic, crushed
450g caster sugar
1 tbsp mustard powder
1 tbsp ginger
600ml white wine vinegar
1 tbsp chilli powder
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp nigella seeds
Method
- Before making the chutney, sprinkle the mango with salt, and leave overnight. Drain in the morning and rinse the mango
- Place garlic, sugar, apples, ginger, mustard powder, and chilli powder in a large saucepan. Slowly heat and dissolve the sugar
- In a separate frying pan, toast the cumin seeds, coriander seeds, and nigella seeds
- Bring the pickling liquid to a boil, add the seeds and the mango
- Let the mixture simmer for approximately 30 minutes until its a thick jam-like consistency
- Sterilise jam jar and store in the fridge for up to 6 months
