Onion Bhajis
No Indian food night is complete without irresistible onion bhajis, part of our quick and flavourful recipe series. Ingredients
- Sliced white onions – 300g
- Besan (Chic- pea flour) – 160g
- Chopped coriander leaves – 2tbsp
- Chopped green chilli – 1
- Salt – 6g
- Bi carbonate of Soda – 2 pinch
- Turmeric powder – 4g
- Chilli powder – 2g
- Coriander seeds crushed/coriander powder – 8g
- Cumin seeds – 5g
- Water – 2 to 3 tbsp
- Cooking oil for deep frying.
- Kohinoor Mint & Coriander Chutney
- Kohinoor Tamarind Chutney
method
Place the sliced onions in a mixing bowl, add the chopped coriander leaves, chopped green chilli, salt, turmeric powder, chilli powder, coriander powder, cumin seeds and mix well.
Allow the onions to rest for 5 minutes.
Heat the oil for frying to 180 degrees centigrade.
Add the besan (chic pea flour) and the bicarbonate of soda.
Add a couple of tablespoons of water if the mix is dry but do not make the mix very wet.
This mix must be used immediately.
Using two tablespoons, take small amounts of the onion mix and shape into bhaji’s. Then fry the bhaji’s in hot oil until golden brown.
Serve hot with Kohinoor Mint & Coriander and Kohinoor Tamarind chutneys.
