Makes 1 large tub
Serves 10-12
Ingredients
300ml double cream
1 standard size 397g tin of condensed milk
100g dark chocolate chunks
Zest of 2 oranges
3 teaspoons ground ginger
Method
- Take about 2 teaspoons of the double cream and mix it with the ground ginger, until they are well combined. Place to one side for later
- Place the rest of the cream and condensed milk into the bowl of a large free-standing mixer (you could use a hand-held electric whisk also) and whisk together on a medium speed, until they form soft peaks
- Add in the cream and ginger mixture and whisk again, for about 30 seconds, until everything is well combined
- Fold through the chocolate chunks and orange zest
- Place the mixture into a large plastic container (one that has a lid and is suitable for the freezer, I used an old ice cream tub), place the lid on and then freezer for at least 8 hours, or until the mixture has completely set
- Remove the ice cream from the freezer about 5 minutes before you want to serve it, as it can set quite hard
- This ice cream will keep well for about a month in the freezer (if it lasts that long)
