Poori is a deliciously golden and fluffy deep-fried bread accompaniment to both savoury and sweet dishes. Try it with your favourite curry or even a dessert.
Ingredients
250g fine wholewheat flour
25g ghee, melted
5g salt
100g water
1L oil, for frying
Method
- Sieve the flour with the salt in a large bowl. Add the melted ghee and mix well
- Add the water until it forms a stiff dough
- Cover with clingfilm for 1 hour
- After resting, make dough balls of 40g and keep under the clingfilm
- Heat the oil in a deep saucepan until it reaches 200˚C
- Roll the dough balls out to 4 inch rounds (don’t use flour to roll out, but oil)
- Deep fry until they puff up and turn golden
