Poori Recipe

Poori is a deliciously golden and fluffy deep-fried bread accompaniment to both savoury and sweet dishes. Try it with your favourite curry or even a dessert.


250g fine wholewheat flour
25g ghee, melted
5g salt
100g water
1L oil, for frying


  • Sieve the flour with the salt in a large bowl. Add the melted ghee and mix well
  • Add the water until it forms a stiff dough
  • Cover with clingfilm for 1 hour
  • After resting, make dough balls of 40g and keep under the clingfilm
  • Heat the oil in a deep saucepan until it reaches 200˚C
  • Roll the dough balls out to 4 inch rounds (don’t use flour to roll out, but oil)
  • Deep fry until they puff up and turn golden
