According to legend, an ascetic named Kashyapa reclaimed the land now comprising Kashmir from a vast lake. That land came to be known as Kashyapamar and, later, Kashmir.
Said to be a piece of heaven on earth, it is the 19th largest state in India and it is located mostly all in the Himalayan mountains which offer beautiful verdant mountains and valleys.
This recipe originated in Baltistan, a region of Kashmir. The dish was traditionally cooked using a metal bowl and was often prepared by sheepherders. A robust combination of caramelised onions with tomato, ginger, bell peppers and garam masala.
