This recipe originated in Baltistan, a region of Kashmir. The dish was traditionally cooked using a bowl and was often prepared by sheep herders. A robust combination of caramelised onions, ginger, bell peppers and garam masala.

According to legend, an ascetic named Kashyapa reclaimed the land now comprising Kashmir from a vast lake. That land came to be known as Kashyapamar and, later, Kashmir.
