Adraki Bhuna Aubergines

These Roast Adraki Bhuna Aubergines recipe are great for when you need to knock up a quick stress-free, vegan meal. Most of the ingredients you will already have in the kitchen, all you will need to add is the aubergines and Kohinoor sauce, making this a healthy and budget friendly way to feed the family!

Recipe for Adraki Bhuna Aubergines


  • Kohinoor Adraki Bhuna sauce – 01 packet
  • Large aubergines – 4
  • Chilli powder – 1/4 tsp
  • Salt – 1/4 tsp
  • Cooking oil – 2 tbsp.
  • Ginger (cut into juliennes) -10 grams
  • Chopped coriander – 10 grams


To create aubergine fan cut 1cm slices but take care not cut through the stem, leave the top of the aubergine intact.

Make a mixture of salt and chilli powder and add cooking oil to make a paste.

Apply this paste lightly on the inside of the aubergine.

Keep on a lightly greased baking tray, roast in hot oven 200 degree C for 10 minutes.

Heat the Kohinoor Adraki Bhuna sauce in a pan adding a few teaspoons of water to thin it down.

Spoon the sauce on the cooked aubergines, sprinkle the ginger juliennes and cook in the oven at 180 degrees C for 10-12 minute.

Serve garnished with chopped coriander.
