Saffron and Mango Chia Pudding

Chia pudding is a delicious and creamy mixture that’s perfect for breakfast, snack, or even dessert! Incredibly healthy by using chia seeds, we’ve flavoured this recipe with fresh mango and saffron.
Ingredients
(serves 2)
65g chia seeds
275ml milk
40ml maple syrup
100g roughly chopped mango
1/2 saffron powder
Method
- Put the chia seeds in a bowl and add 250ml of the milk. Stir the mixture continuously for 3-4 minutes until thoroughly mixed. Leave to rest for 10-15 minutes
- Add the maple syrup and stir into the mixture
- Add the remaining milk and stir thoroughly
- In a bowl, add the mango and saffron powder and stir together
- In glasses or jars, add 2 tablespoons of the chia seed mixture each
- Layer a tablespoon of the mango
- Add another layer of the chia mixture and then decorate with the remaining mango
- Put in the fridge for at least 2 hours but the mixture can last up to 3 days
