Brussel sprouts get a bad reputation from years of bad cooking. Forget your steams Brussels or the ones that get boiled to death and spice up your Christmas veg.

Ingredients

500g brussels sprouts, halved
2 tbsp oil
1 garlic clove, crushed
2 red chillies, sliced
1/2 tsp turmeric
1/2 tsp garam masala
1 tbsp lemon juice
2 tbsp mango chutney
Fresh coriander, chopped

Method

  • Heat the oil in a large frying pan
  • Add the crushed garlic, chilli, turmeric, and garam masala
  • Fry gently and be careful not to burn
  • When you can smell the spice aromas, add the lemon juice and cook out
  • Add in the Brussel sprouts and coat in the spices
  • Add the mango chutney and bring the heat down and slowly braise the sprouts in the spicy glaze
  • Cook on low for 10 minutes until sprouts are cooked through
  • Sprinkle with coriander and serve
