The vada pav is an iconic Indian sandwich found on the bustling streets of Mumbai. This street food delicacy combines soft spiced potatoes enveloped in a crispy batter, doused in many chutneys and then served in soft bread rolls creating a rollercoaster on your palette.

Ingredients

Potato Filling
2 green chillis
2 garlic cloves, crushed
1cm crushed ginger
1 tsp back mustard seeds
8 curry leaves
500g cold mashed potatoes
½ tsp ground turmeric
salt and pepper
4 tbsp chopped coriander

Batter
100g gram flour
½ tsp ground turmeric
½ tsp baking powder
80ml water

Method

  • Mash together the chillies, garlic, and ginger
  • Fry the mustard seeds until they pop and add the curry leaves
  • Add the chilli/garlic/ginger paste and cook for 10 seconds
  • Mix with the mashed potato, turmeric, salt, and coriander
  • Allow to cool
  • Mix together all the batter ingredients
  • Shape the potato mixture into balls and coat in the batter
  • Deep fry until golden brown

Green Chutney

Ingredients
Large handful coriander
Handful of mint leaves
5 green chillies
Juice of 1 lemon
1 tbsp vegetable oil

Method

  • Using a food processor, blend the coriander, mint, green chillies and lemon juice with a splash of water
  • Add the oil and season to taste

Dry Garlic Chutney

Ingredients
10 garlic cloves
1 tbsp groundnut oil
35g desiccated coconut
1 tsp chilli powder

Method

Fry the garlic cloves until caramelised
Add the coconut and lightly toast until golden
Blend with chilli and oil and season

To serve the vada pav, use soft white bread rolls and add the deep fried potatoes and be generous with the chutneys. If you like an added spice, serve with a fried green chilli, they even have some amazing health benefits!
