Ingredients
2 large mangos
80g chia seeds
500ml coconut milk
4 tbsp honey
5 tbsp coconut yoghurt
Method
- In a food processor, blend together 1 mango until it is a puree
- Add this puree to a bowl with the chia sweets, coconut milk, and honey. Mix together
- Chop the remaining mango into small chunks and gently fold in
- Refrigerate the mixture for 15 minutes, stir, and return to the fridge for 15 minutes
- In serving glasses, alternate layers of the coconut yoghurt and chia pudding. Serve with a slice of lime
