Chia pudding is a delicious treat that’s surprisingly healthy! Great food – no guilt. We’ve created a sumptuous recipe using sweet and juicy mangos that can be enjoyed at any time of the day.

Ingredients

2 large mangos
80g chia seeds
500ml coconut milk
4 tbsp honey
5 tbsp coconut yoghurt

Method

  • In a food processor, blend together 1 mango until it is a puree
  • Add this puree to a bowl with the chia sweets, coconut milk, and honey. Mix together
  • Chop the remaining mango into small chunks and gently fold in
  • Refrigerate the mixture for 15 minutes, stir, and return to the fridge for 15 minutes
  • In serving glasses, alternate layers of the coconut yoghurt and chia pudding. Serve with a slice of lime
