Spicy Tamarind Glazed Pork Ribs

Ingredients

  • Kohinoor Tamarind Chutney – 1 bottle
  • Rack of pork ribs – 500g-600g
  • Salt – 1 tsp
  • Black pepper powder – ½ tsp
  • Ginger garlic paste – 2 tsp
  • Apple cider vinegar – 3 tbsp
  • Minced garlic – 1 tsp
  • Chilli powder – ¼ tsp
  • Garam masala powder – ½ tsp
  • Cooking oil – 2 tbsp

method

Clean the pork ribs of excess fat and sinews. Make a mix of salt, pepper, ginger garlic paste and apple cider vinegar, apply on both sides of the ribs and marinate for 30 minutes.

Place the rib on a rack over a roasting tray, add half a cup of water in the tray, cover with foil and bake at 170°C for 2 hours.

Make a marinade by mixing the Kohinoor Tamarind chutney, chilli powder, minced garlic, garam masala and oil.

Remove the ribs from the oven and allow to cool.

Brush the marinade on both sides of the ribs.

Cook on a barbeque or in a preheated oven at 200°C for 25-30 minutes.
