Spicy Chicken & Chorizo Rice

Ingredients
- Kohinoor Balti Cooking Sauce – 1pkt
- Diced chicken breast -200gms
- Spicy chorizo diced-100gms
- Cooking oil-02tbsps
- Red onion chopped-100gms
- Kohinoor Platinum basmati rice-240gms
- Water-200ml
- Chopped coriander-02tsp
- Mint sauce
- Poppadom’s (to serve with)
method
Wash 240g of rice until the water runs clear. Remove the paddle out of the bowl, put your rice in with 200ml of water.
Using the Multicook function, select the ‘STEAM’ programme and begin cooking the rice for 10 mins (auto temperature).
Whilst the rice cooks, begin prepping your onions, chicken by cut into squares and dice your Chorizo.
After 10mins, pour the Balti mix into the bowl, select the ‘RISOTTO’ setting and cook for a further 3 mins – click the ‘STIR’ function.
Pour the cooked rice into a separate bowl, do not wash the bowl as the Kohinoor Balti flavouring will be used as seasoning for the Chicken.
Garnish with chopped coriander and serve with a side of poppadom’s and mint sauce. Enjoy!
Using the SAUTE function, and add the diced Onions, Chorizo, cook until cooked (Approx 4mins)
In the same bowl, add your Chicken and now using the ‘AIR FRY’ function, air fryer the Chicken and Chorizo for a further 8 mins until Chicken is cooked thoroughly.
Pour the rice back into the bowl and mix until all well combined.
