This Sindhi style teen dal recipe is a delicious combination of three different lentils, delicately spiced. This is a childhood favourite of our Chef Navin who would enjoy it both hot and cold the next day!
Ingredients
100g chana dal
100g g split black urad dal
100g split green moong dal
1/2 tsp turmeric powder
2 green chillies
2 tsp cooking oil
3 tsp ghee
1 tsp cumin seeds
1/2 tsp chilli powder
1 tsp salt
100g onions, chopped
150g tomatoes, chopped
1 1/2 tbsp garlic, chopped
1 tsp ginger, chopped
2 tsp coriander, chopped
1/2 tsp garam masala
Method
- Mix all the 3 different dals (lentils) and wash in cold running water until the water runs clear. Soak the lentils in 750ml warm water for 1/2 hour
- In a large pot, add the dal and water, turmeric powder, and whole green chillies
- Bring to a boil and skim the surface for any residue to remove. Bring the mixture down to a simmer and continue to cook until the dal is fully cooked
- In a frying pan, add the oil and ghee and heat
- Add the cumin seeds until they start to crackle then add the onion and fry until coloured slightly
- Add the garlic and ginger and couple for a couple of minutes. Add the chopped tomato and chilli powder and continue to cook until the oil is absorbed
- When the dal is cooked, add the spice mixture (tarka), salt, and garam masala. Continue to cook gently for 10 minutes
- Serve with sprinkling of chopped coriander
