Keralan Fish Coconut Curry

1. Wash the Kohinoor Extra Long Basmati rice in lukewarm water and leave to soak.

2. Take 300g prawns or fish and mix in the marinade and set aside.

3. Take a large pan, add 1ltr of water, add ½ tsp of salt, 2 tsp of cooking oil and bring to a boil.

4. Strain the soaked rice, add to the boiling water and simmer for 10-12 minutes.

5. Whilst the rice is cooking, let’s cook the protein

6. Heat 2 tsp of oil and stir fry the marinated prawns or fish for 4-5 minutes.

7. Once the rice has cooked for 10-12 minutes, remove pan from heat and drain the water. Add the cooked rice back into the pan and cover with a lid.

9. Heat 1 tsp of oil in a pan, add the spices and cook for 1 minute. Add the Kohinoor cooking sauce and bring to a boil. Add the cooked protein to the pan, reduce the heat and simmer for a further 4-5 minutes, or until cooked.

9. Serve hot, garnished with chopped coriander leaves and Kohinoor Extra Long Basmati rice.
