Spice Level: Hot

A popular hot & spicy recipe from Southern India. This traditional recipe has its roots in the Chettinad region, where it is prepared from fresh ground masalas.

Chennai:
Formerly known as Madras, Chennai is a city of genuine character - home to one of the world's longest urban beaches, a thriving tradition of Carnatic music and Bharatanatyam dance, and a Tamil food culture that rewards the curious. Its position on the Coromandel Coast also makes it a natural base for exploring nearby Mahabalipuram and Pondicherry.

My other half is obsessed with this Madras sauce! I cannot recommend this highly enough.

How to use cooking sauce

Easy & effortlessly authentic

  1. Step 1

Heat 1 tablespoon of oil in a frying pan and stir-fry 500g of your chosen protein, such as chicken breast, beef, lamb or a vegetarian alternative.

  2. Step 2

Once the protein is lightly browned, add the contents of the pouch and stir well. Cover and simmer until your chosen protein is cooked through (approximately 20 minutes).

  3. Step 3

Let the sauce thicken to your liking. For extra richness, add a knob of butter and 50ml of double cream, then garnish with freshly chopped coriander. Serve with Kohinoor Basmati Rice for the perfect mid-week meal.

Chennai

Chennai, gateway to South India, is home to a cuisine built on rice, lentils and coconut. The food is vibrant, tangy, and deeply satisfying — from crispy dosas to rich Chettinad curries.
